    About this recipe: The trick to great guacamole is - of course - good avocados. Make sure your avocados are ripe and soft, and the Haas variety is best in this recipe. Serve this dip with tortilla crisps or an array of fresh vegetables.

    Ingredients
    Serves: 16 

    • 2 avocados
    • 1/2 lemon, juiced
    • 2 tablespoons chopped onion
    • 1/2 teaspoon salt
    • 2 tablespoons (30ml) extra virgin olive oil

    Directions

    1. Cut the avocados into halves. Remove the stones, and scoop out the pulp into a small bowl.
    2. Use a fork to mash the avocado.
    3. Stir in lemon juice, onion, salt and olive oil.
    4. Cover the bowl, and refrigerate for up to 1 hour before serving.
