Chicken Semur (Indonesian Chicken Stew with Sweet Soy Sauce)

    Semur is a type of meat stew that is braised in thick brown gravy commonly found in Indonesian cuisine. This version of chicken semur is the adapted one from traditional semur. It is sweet and spicy in the same time.

    Serves: 4 

    • Chicken cut in medium cube coated in 1 tbsp salt
    • 3 big Shallots (sliced)
    • 3 Garlic (minced)
    • 1 carrot
    • 2 tbsp Olive Oil
    • 3/4 cup Kecap manis
    • 8 kaffir lime leaves
    • 3/4 cup ketchup
    • 1 tbsp salt
    • 1 tsp white pepper
    • 3 cups water
    • 1/2 tsp chili red pepper flakes
    • 3 potatoes (cubed in 4)
    • For Garnish
    • Fried Shallots
    • Green Onion

    1. Heat 2 tbsp olive oil in the hot tall pot, add sliced shallots and garlic, and then add chicken. Brown the chicken a bit and then add carrot and potato.
    2. After the chicken is cooked, add water and the rest of the ingredients to the pot in a high heat for 15 minutes or until it is boiling.
    3. Reduce the heat to medium, cover and let it simmer for 30-45 more minutes or until carrot/potato is soft.
    4. To serve: Garnish soup and serve with steam white/brown rice.
