Sometimes I get home late and don't have that much time to cook and clean up. This fish can be cooked in one pan/wok so less cleaning up to do later!

1/2kg whole threadfin
A small amount of Sichuan vegetables, sliced
A few slices ginger
A small amount of salted vegetables
1 stalk celery, sliced
1 tbsp water
1 tomato, quartered
- Pan-fry the threadfin till golden brown on both sides. Use a small flame to control the heat more easily.
- Move the fish to the side and fry all the vegetables except the tomato until soft and fragrant. Add water and stir-fry to combine.
- Add in the tomato and stir-fry again until the tomato is softened. Dish out and serve.
