I love the braised tofu served at Chinese restaurants, but at home I like to make it healthier (without the deep frying). In my version, I use a lot of vegetables to make it more filling. This dish is good on its own or with rice.

Instant dashi granules are sold in conveniently sized jars or sachets and vary in strength. Add more dashi to your soup if you want a stronger stock. You can use yellow, white or red miso paste for this soup. Yellow miso is sweet and creamy, red miso is stronger and saltier.

This is a fabulously delicious and easy-to-make dressing. My kids will even eat salad when I put this dressing on it. It is also good on veggies, crackers, in soup, and on toasted pita bread. I love this stuff!

I am a big fan of miso soup, and this one is fairly straight forward with ingredients that are easy to find. Plus, it tastes great. If you prefer, you can replace the spinach with pek chye/pak choy
