I came up with this recipe to entertain friends. Since I am a semi-vegetarian and love to BBQ, I am always inventing something new. The first time I made this, my meat-lover friends raved about this dish! I prefer mesquite coals over gas barbeques...however, either works fine.

Calzone is an Italian pizza pocket that uses pizza dough to wrap up a filling. The delicious filling here is ready-cooked roast chicken mixed with spinach, capsicums and creamy ricotta cheese. Serve with a side salad.

As the name suggests, this has a messy appearance—a Bolognese-type mixture served between wholemeal rolls—but it's a recipe all the family will love, and the filling can be prepared ahead or frozen. Lean minced chicken is used here as a healthy alternative to minced beef, but you could use either.

I came up with this as I was trying to use things I had on hand. I have fresh dill growing on my balcony, which was the key inspiration for this gorgeous version of chicken salad.

Five-spice powder — a fragrant mix of cinnamon, cloves, fennel seeds, star anise and Sichuan peppercorns — is used a great deal in Chinese cooking, and here it adds an Asian flavour to appetising pita bread sandwiches.

Sun-dried tomatoes, garlic and herbs create a Mediterranean flavour, and a fresh chilli and tomato salsa adds extra zip. Making your own burgers is so worthwhile, as they're much lower in fat than most ready-made burgers, and you can flavour them as you please.

A fabulous vegetarian bite that's deliciously healthy as well as fun to eat. The bean and vegetable mixture has a great spicy kick, and is combined with crunchy salad, grated cheese and creamy yogurt in tortilla wraps.
