When I was a little girl, I always looked forward to the end of dinner at a Chinese restaurant because I knew what was waiting for me--almond jelly! I was thrilled when I learned to make it at home. You can change the amount of liquid you add (either water or milk) to change the consistency of the jelly.

This is a crunchy, wonderfully satisfying salad that is fab with chicken leftover from yesterday's barbecue. The dressing is sweet and sour, mingling brown sugar with soy sauce and rice vinegar. Fried rice noodles add the crunch.

This vegetarian dish can be served with steamed rice or noodles. The delicate Japanese tofu takes the flavour of the sauce and the vegetables give the dish texture.

I love the braised tofu served at Chinese restaurants, but at home I like to make it healthier (without the deep frying). In my version, I use a lot of vegetables to make it more filling. This dish is good on its own or with rice.

Quick and delicious, this is an easy dish to serve during the week or for special occasions. If you prefer, you can remove the prawn heads but keep the shells on so they stay juicy.

You can easily buy char siew at the hawker centre but making it at home is so easy and tasty too. And you can omit the red coloring that most hawkers add to their meat. Instead of roasting it in the oven, try grilling it on your bbq.
