This flagship, Tuscan steak is made from the region's Chianina breed of cattle which are prized for their tenderness and flavour. In typical Italian style, simplicity rules the day; little more than olive oil, rosemary, and salt are needed to highlight the rich flavor of the grilled meat. With Italian food, freshness and quality are top priority, so I use nothing less than choice porterhouse, and much prefer prime!

This is a very simple, healthy way to prepare brinjal. If you can find yuzu juice, use that instead of orange and lime juice. Try the marinade on all sorts of grilled vegetables like capsicum, onions or carrots at your next barbecue.

Japanese brinjal (eggplants) are given a sweet miso glaze and broiled. Not an authentic recipe but it's easy to find the ingredients at many grocery stores. These tender brinjal (eggplants) are delicious as an appetizer or a vegetarian main course. If you cannot find agave nectar, honey may be substituted.
