Pig Stomach Soup (猪肚汤)

    This is a favorite in the family. The most important step in cooking this soup is to clean the pig stomach well so that all the smells and dirt are removed.

    • 1 pig stomach
    • 3 limes, top cut off
    • 1 pandan leaf
    • A pinch of salt
    • 2.5kg water
    • 400g pork ribs
    • 1 rack chicken bones
    • Freshly pounded black pepper, to taste
    • 1 can button mushrooms, drained


    1. Turn the pig stomach inside out and wash to remove as much of the impurities on the lining as possible.
    2. In a large pot of boiling water, add the pig stomach, limes, pandan leaf and salt. Allow the pig stomach to soak in the boiling water for about 3-5 minutes.
    3. Remove from pot and try to take out as much of the impurities as possible. Repeat once more, or until the pig stomach does not smell. Cut the pig stomach into bite-sized pieces.
    4. Pour the 2.5kg of water into a large pot and add the rest of the ingredients. Allow it to boil for 1.5-2 hours under a small flame. Serve.
