About this recipe: This is an easy to make lunch dish that doesn't require much effort. Depending on your liking, more/less water can be added to the dough so that it will be more chewy/less chewy.

  • 1120g water
  • 1 rack chicken bones
  • 2 handfuls ikan bilis
  • 250g plain flour
  • 1 egg, beaten
  • 2 stalks caixin
  • 2 dried mushrooms, soaked until soft, sliced
  • A dash of pepper
  • A pinch of salt
  • 1 tbsp light soy sauce
  • ½ chili, sliced


  1. In a large pot, boil 1kg of water and add chicken bones and ikan bilis. Allow it to boil under low heat for about 1 hour.
  2. Pour the flour into a large mixing bowl and add the egg. Add 120g of water gradually and mix to combine. Add more water if necessary to combine into a smooth dough. Knead the dough for about 5 minutes.
  3. Pull out small pieces from the ball of dough with your thumb and second finger. Press the dough into either a rough circular or triangular shape. Drop the pieces of dough into the water to allow it to cook.
  4. Once all the dough has been made into small pieces, allow it to cook for about 5-6 minutes.
  5. Add the rest of the ingredients and stir well to combine. Serve.
