Kway teow bee hoon soup

    This is a very simple one-dish lunch meal. The noodles here can be substituted for other sorts - we just personally prefer kway teow and beehoon!

    • 1 kg water
    • 275g chicken bones
    • A handful ikan bilis
    • 100g beehoon
    • 300g kway teow
    • 40g beansprouts
    • 350g fish slices
    • 50g pork shoulder meat, sliced
    • A pinch of salt
    • 1 tbsp light soy sauce
    • Cilantro for garnish
    • Fried shallots for garnish
    • Chili for garnish


    1. Boil the water in a large pot. Add chicken bones and ikan bilis and boil under low heat for 40 minutes.
    2. Add the kway teow, bee hoon and beansprouts and stir well. Allow it to boil for another 2-3 minutes.
    3. Add fish slices and pork shoulder meat and allow it cook until the fish slices turn white and the pork loses its pinkness.
    4. Add salt and light soy sauce. Stir well to combine and serve with cilantro, fried shallots and chili.
