About this recipe: Whitebait is usually very salty so it should be rinsed beforehand to remove some of the saltiness. Tastes really good with egg!

  • 4 eggs, beaten
  • 30g whitebait
  • A dash of pepper


  1. In a frying pan, fry whitebait quickly under medium heat for 30 seconds.
  2. Mix the eggs and pepper together in a small bowl.
  3. Pour the eggs out on top of the whitebait. Allow it to cook for 1-2 minutes or until the base has set. Gently lift the omelette and flip it over. Allow it to cook for another 1-2 minutes. Remove from pan.
