Teochew style steamed fish

    This is a simple dish that we usually eat at home most days. The fish can be substituted for any other sort of white-fleshed fish.

    • 800g fish
    • Small amount of salted vegetables, sliced
    • 1 tomato, cut into quarters
    • 4 slices ginger, sliced into strips
    • Small amount of leek
    • 1/3 chilli, chopped
    • 1 tbsp light soy sauce
    • 2 tsp water
    • 1 tbsp hot oil
    • 1 tbsp shallots


    1. Fill a large wok 1/3 full with water and boil under high heat.
    2. While the water starts to boil, place the fish on a large plate. Arrange the salted vegetables, tomato, ginger, leek and chilli on the fish.
    3. Drizzle the light soy sauce and water over the fish. Steam for 10 minutes.
    4. Before serving, drizzle the fish with hot oil and top with shallots. Serve.
