Stir-fried shredded sweet gourd

    This is a classic combination of shredded gourd and egg. Other gourds and melons can be used as a substitute.

    • 2 cloves garlic, chopped
    • 1 sweet gourd, shredded
    • 1 carrot, shredded
    • 2 eggs, beaten
    • 20g tanghoon, soaked until soft


    1. Oil a wok and fry the garlic until it starts to brown. Add in the sweet gourd and carrot and stir-fry until they are soft.
    2. Add in the tanghoon and stir-fry for another 1 minute.
    3. Pour the eggs over the vegetables and stir continuously to break up the egg so that it coats the vegetables and tanghoon. Cook until the egg is set. Serve.
