Potato "lasagna"

    This is our take on lasagna. We do not use pasta sheets, instead it is topped with boiled and sliced potatoes instead.

    • 10 potatoes
    • 450g canned pasta sauce
    • 200g minced beef
    • 5 slices ham
    • 150g mozzarella cheese


    1. Boil the potatoes, skin on for 25 minutes in a large pot. Once cooled, remove the skins and slice the tomatoes into 0.5cm thick slices.
    2. Oil a frying pan and fry the beef under medium heat until it starts to turn brown. Add the ham and pasta sauce and cook until the pasta sauce is hot. Remove from pan.
    3. Layer the potatoes at the bottom of 2 large (or 6 smaller) casserole dishes evenly. Pour the beef and tomato sauce over the potatoes and set aside until it is to be eaten.
    4. Sprinkle mozzarella cheese over the potatoes and put in a microwave oven. Cook on high for about 2-3 minutes. Serve.
