Ridge gourd and egg stir-fry

    Ridge gourd is a vegetable popular in India with a mildly sweet taste. This dish is really tasty and can be served at lunch or dinner.

    • 2 tbsp oil
    • 2 cloves garlic, chopped
    • 1 tbsp dried shrimp
    • 1 ridge gourd, peel removed, cut into chunks
    • 2 eggs, beaten
    • A pinch of salt


    1. Oil the frying pan with 2 tbsp of oil. Add the garlic and fry until brown under medium heat.
    2. Add dried shrimps and fry until fragrant. Next, add ridge gourd and stir-fry for about 1 minute.
    3. Pour beaten eggs over the ridge gourd and stir to break up the eggs and to coat the ridge gourd with it. Cover the pan to allow the gourd and eggs to cook. Check every 30 seconds. Once the gourd is soft, it is cooked. Serve.
