Lotus root and yacon soup

    This is a simple recipe for lotus soup with pork ribs and yacon. Yacon is a sweet-tasting root that makes this soup very nutritious.

    Serves: 5 

    • 1125ml water
    • 300g pork ribs
    • 500g lotus root
    • 200g yacon
    • 1 tbsp wolfberries
    • 4-5 dried mushrooms, soaked until soft
    • 1 dried cuttlefish
    • 3 red dates
    • a handful of peanuts

    Prep:2hr  ›  Cook:2hr  ›  Ready in:4hr 

    1. In a large pot, add water and allow it to boil.
    2. Add pork ribs and allow it to boil.
    3. Once the water boils, add the rest of the ingredients. Cook under a small flame for 2 hours. Serve.
