Deep-fried red fish (红鱼)

    This recipe calls for red fish but the red fish can be substituted by other sorts of smaller fish that you can find at a market.

    Ingredients
    Serves: 5 

    • 5 whole red fish (or other small fish)
    • small amount of salt
    • Oil for frying

    Directions
    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Pat the fish dry and rub a small amount of salt onto the fish to remove the smell.
    2. Coat the frying pan with a layer of oil and bring it up to low-medium heat.
    3. Lower the fish onto the pan and pan-fry until the bottom is golden. Flip to the other side and pan-fry until golden as well. Remove from pan.
    4. Blot dry with kitchen towels. Serve.
