Deep-fried battered whitebait

    Whitebait is generally salty, so when the whitebait is bought, it should first be rinsed to remove some of the saltiness.

    Ingredients
    Serves: 4 

    • 150g whitebait
    • 1 egg, beaten
    • Plain flour

    Directions
    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Add the whitebait and egg into a bowl and mix so that the egg coats the whitebait evenly.
    2. Add just enough plain flour to the egg mixture coating the whitebait so that when the whitebait is lifted from the bowl, it is sticky enough for the flour not to fall off.
    3. Deep-fry the whitebait in a deep fryer until golden. Serve.
