Fried egg with prawns and jiu cai (韭菜)

    This recipe is credited to Uncle Keith. This is a simple stir-fried egg dish with jiu cai which are also known as chives.

    Serves: 4 

    • 2 tbsp oil
    • 100g chives (韭菜), cut diagonally
    • 6-7 prawns, cut into thirds
    • 2 eggs, beaten
    • a pinch of salt

    1. In a pan, heat a pan with 2 tbsp of oil and fry chives under medium heat until they are soft. Remove from pan.
    2. In the same pan, fry the prawns under medium heat until pink. Add the chives, eggs and salt. Fry until the egg is golden brown and set. Serve.
