Bite-sized tofu omelettes

    These were my favorite when I was young. They looked like tiny pancakes!

    Serves: 5 

    • 1/2 tube soft tofu, mashed
    • 3 eggs, beaten
    • 2 dried mushrooms, soaked until soft, chopped
    • 2 inches knob carrot, chopped
    • 100g minced pork
    • 3 tbsp flour
    • a pinch of salt
    • 1 tsp sesame oil
    • 1 tsp light soy sauce
    • 3 tbsp cooking oil

    1. Mix all the ingredients except the cooking oil in a large bowl.
    2. Oil a frying pan with cooking oil. When the pan is hot (ie. pan is smoking), drop a spoonful of the mixture onto the pan.
    3. Fry until the base is set. Flip the omelette over and allow it to fry til golden brown. Repeat till both sides are golden. Serve.
