Marinate the minced meat with the salt, cornflour and 1 tbsp sesame oil for about 1 hour.
Place some minced meat in the middle of the wanton skin. Apply some water to the sides of the wanton skin. Take one corner of the wanton skin and fold it to the corner diagonally opposite. Now, take the two adjacent corners and fold them towards each other. Apply some water so that the two corners will stick.
Lower wantons in a pot of boiling water and allow it to cook for about 2-3 minutes under medium heat. Remove from pot.
Separate the mee into 4 portions. For each portion, blanch mee for about 30 seconds in boiling water. Drizzle 1 tsp each of dark soy sauce and sesame oil and mix well.
Plate the mee, wanton, char siew and blanched chye sim on 4 plates. Serve with spring onions as garnish.
