Stir-fried dragonfruit and Chinese yam

    This is a very unique and delicious dish.

    Serves: 5 

    • 400g Chinese yam (山药), cut into short sticks
    • 1 egg, beaten
    • ½ cup flour
    • 3 tbsp tomato sauce
    • juice from one orange
    • 1 tbsp sugar
    • 1 tbsp vinegar
    • 2 tbsp water
    • ½ dragonfruit, diced

    1. Dip the Chinese yam into egg and then coat with flour. In a deep fryer, deep fry the Chinese yam until golden brown.
    2. In a saucepan, add the tomato sauce, orange juice, sugar, vinegar and water and cook under medium heat. Once the sugar dissolves, add the Chinese yam back into the saucepan and coat well.
    3. Remove the Chinese yam from the pan and add the diced dragonfruit over the yam. Serve.
