Sharkfin melon and mushroom soup

    This is a very interesting clear soup.

    Serves: 5 

    • 2500ml water
    • 1 shark-fin melon
    • 1 carrot, cut into strips
    • 8 dried mushrooms, soaked until soft, cut into halves
    • 3 packets enoki mushrooms
    • 1 tbsp cornflour
    • 1 tbsp sesame oil
    • 1 tbsp light soy sauce

    1. In a large pot, boil the melon and 2500 ml of water under small heat for 1 hour. Remove from pot and allow it to cool. Reserve liquid.
    2. Remove the melon skin and seeds. Slice melon thinly.
    3. Add the sliced melon, carrots and mushrooms into melon liquid. Boil under medium heat. Once the water boils, add the enoki mushrooms, cornflour, sesame oil and light soy sauce. Allow it to boil for another 5 minutes. Serve.
