Claypot Pork Ribs with Sea Cucumber

    This is a really interesting and delicious pork dish.

    Serves: 5 

    • 1 sea cucumber
    • 1 tsp salt
    • 9 slices ginger
    • 600g pork ribs
    • 1 tbsp light soy sauce
    • 2 tbsp sesame oil
    • 1 tbsp rice wine
    • a dash of pepper
    • 1/3 cup cornflour
    • 6 small red onions, sliced
    • 1 can (200g) button mushroom, drained
    • ½ bittergourd, sliced thickly
    • 2 dried scallop, soaked until soft
    • 8 dried mushrooms, soaked until soft, cut into halves
    • ½ carrot, sliced
    • 2 tbsp oyster sauce
    • 400ml hot water
    • 100g snow peas
    • 3 beancurd puffs, cut into quarters

    1. Boil sea cucumber with salt and 4 slices of ginger for 10 minutes. Remove and wash with cold water. Slice thickly.
    2. Marinate pork ribs with 1 tbsp each of light soy sauce, sesame oil, rice wine and a dash of pepper for 4 hours. Coat pork ribs with cornflour.
    3. In a claypot, put 1 tbsp each of cooking oil and sesame oil. Also add sliced onions, 5 slices of ginger and coated pork ribs. Fry under medium heat until pork ribs are slightly crispy.
    4. Add canned button mushrooms, bittergourd, scallop, dried mushrooms and carrot and stir. Add in the oyster sauce and just enough hot water to cover all the ingredients in the claypot.
    5. Boil for 30 minutes under low heat. Add the sea cucumber slices, snow peas and beancurd puffs and cook for another 5-10 minutes. Serve.
