Prawn fried rice

    Leftover rice can be put to good use by making this delicious dish!!

    Serves: 4 

    • 200g prawns, shelled
    • 1½ tbsp light soy sauce
    • 1 tsp rice wine
    • 1 tsp sesame oil
    • a dash of pepper
    • 2 tbsp oil
    • 1 medium yellow onion, diced
    • 1 chinese sausage, sliced
    • 75g mixed vegetables
    • 500g rice, cooked
    • 1 egg, beaten

    1. Marinate the prawns with 1 tsp each of light soy sauce, rice wine and sesame oil, as well as pepper for about 30 minutes.
    2. Oil a frying pan with 2 tbsp of oil. Fry the onion under medium heat until slightly translucent. Add the sausage, prawns and mixed vegetables and stir-fry until prawns turn pink.
    3. Add in the rice and egg and mix well. Stir-fry under high heat for 2-3 minutes. Drizzle 1 tbsp of light soy sauce over the rice and mix well. Serve.
