Fuzzy melon stir-fry

    The tanghoon noodles in this dish really goes well with the fuzzy melon.

    Serves: 5 

    • 2 cloves garlic, chopped
    • a handful of dried shrimps
    • 2 dried mushrooms, soaked until soft, sliced
    • 1 fuzzy melon, shredded
    • 75ml water
    • 1.5 tbsp light soy sauce
    • 25g tanghoon, soaked until soft
    • Oil

    1. In a pan, fry the garlic under medium heat until it starts to brown.
    2. Add the dried shrimps and mushrooms and continue to stir-fry for 30 seconds.
    3. Add the fuzzy melon and mix well. Cover the pan with a lid and allow it to sit for 2-3 minutes.
    4. Add water, light soy sauce and tanghoon and fry for 1 minute. Serve.
