Fuzzy melon stir-fry
The tanghoon noodles in this dish really goes well with the fuzzy melon.

2 cloves garlic, chopped
a handful of dried shrimps
2 dried mushrooms, soaked until soft, sliced
1 fuzzy melon, shredded
1.5 tbsp light soy sauce
25g tanghoon, soaked until soft
- In a pan, fry the garlic under medium heat until it starts to brown.
- Add the dried shrimps and mushrooms and continue to stir-fry for 30 seconds.
- Add the fuzzy melon and mix well. Cover the pan with a lid and allow it to sit for 2-3 minutes.
- Add water, light soy sauce and tanghoon and fry for 1 minute. Serve.
