Claypot Chicken and Potatoes in Dark Soy Sauce

    This is a sweet braised chicken dish. The chicken is so tender that it just falls apart!

    Serves: 5 

    • 1 tbsp white sugar
    • 4 tbsp dark soy sayce
    • 6 cloves garlic, flattened
    • 4 mushrooms, soaked, cut in halves
    • 5 chicken wings
    • 1 tbsp sesame oil
    • 1 tbsp light soy sauce
    • 2 medium-sized potatoes, cut into quarters and soaked in salt water for 20mins
    • 1/2 packet dried beancurd skin, soaked and cut into 5cm pieces
    • 500 ml hot water

    1. Marinate chicken wings with 1 tbsp each of dark soy sauce, sesame oil and light soy sauce for 3 hours.
    2. In a claypot, fry sugar on low heat until it melts and turns brown.
    3. Add 3 tbsp dark soy sauce, mushroom and garlic and fry until fragrant.
    4. Turn the stove on to medium heat. Add in the marinated chicken wings and potato quarters and cover the claypot with a lid for 5 minutes. Stir to make sure that the wings and potatoes are covered with the soy sauce mixture and then keep covered for another 5 minutes.
    5. Pour the hot water into the claypot and turn on the stove to high heat.
    6. Once the water boils, add in the beancurd skins. Turn the stove down to low heat and simmer for 45 minutes, or until the chicken is cooked.
