Yam Rice

    This fried rice is flavorful and delicious! One of my favorites!

    Serves: 5 

    • 2 tbsp oil
    • 8 cloves garlic, flattened
    • 250g pork
    • 6 small red onions, chopped
    • a handful dried shrimp
    • 10 mushrooms, soaked until soft and cut into strips
    • 1 medium-sized yam, diced
    • 1 tbsp light soy sauce
    • 5 cups rice, soaked for 1 hr
    • 3 tbsp dark soy sauce
    • 4-5 stalks cilantro, cut

    1. Oil a wok with 2 tbsp of oil. Add garlic and pork and fry under medium heat until pork turns brown. Remove from wok.
    2. Add onions into the same wok and fry until brown. Next, add dried shrimp, mushroom, yam and light soy sauce. Mix well. Cover the frying pan and let ingredients cook until fragrant.
    3. Add rice and dark soy sauce and stir until the rice is coated with the dark soy sauce. Continue stirring for 5 minutes. Turn off heat.
    4. Put the rice mixture into the rice cooker and pour just enough hot water to cover the rice. Cook in rice cooker until done and garnish with cilantro. Serve.
