    About this recipe: This tastes really good even though I don't usually like eggplant

    Ingredients
    Serves: 3 

    • 1 eggplant, cut
    • 2 eggs, beaten
    • 1 tsp lime juice
    • cilantro for garnish

    Directions
    Prep:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Put eggplant into a pot of boiling water and allow it to boil for about 3 minutes or until soft. Remove from pot and pat dry.
    2. Coat eggplant with beaten egg.
    3. In a hot pan, fry eggplant flat side down over medium heat for about 1-2 minutes and flip over. Allow eggplant to fry for another 1-2minutes. Remove from pan and use kitchen towels to blot dry.
    4. Scatter lime juice and cilantro over eggplant. Serve.
