This tastes really good even though I don't usually like eggplant

1 eggplant, cut
2 eggs, beaten
1 tsp lime juice
cilantro for garnish
- Put eggplant into a pot of boiling water and allow it to boil for about 3 minutes or until soft. Remove from pot and pat dry.
- Coat eggplant with beaten egg.
- In a hot pan, fry eggplant flat side down over medium heat for about 1-2 minutes and flip over. Allow eggplant to fry for another 1-2minutes. Remove from pan and use kitchen towels to blot dry.
- Scatter lime juice and cilantro over eggplant. Serve.
