Yee mee soup

    This is yee mee, but not cooked in the usually wok hei way. Rather, it is made into a soup.

    Serves: 3 

    • 2 handfuls ikan bilis
    • 50g minced pork
    • 2 mushrooms, soaked until soft, sliced
    • 3 dried scallops, soaked until soft
    • 3 stalks chye sim
    • 1 tbsp oyster sauce
    • 1200 ml water
    • 180g yee mee
    • 3 sotong balls
    • 1 egg, beaten

    1. In a frying pan, fry 1 handful of ikan bilis until crispy under medium heat. Make sure not to let the ikan bilis char. Remove from pan.
    2. In the same pan, stir-fry the minced pork, mushrooms, scallops, chye sim and oyster sauce under medium heat until the minced pork is cooked and turns gray. Remove from pan.
    3. In a pot, place 1 handful of ikan bilis in the water and allow it to boil. Once the water boils, add the yee mee and stir until it turns soft. Quickly add the sotong balls and egg. Stir to break the egg up into slivers.
    4. Add the stir-fried minced pork and mushroom mixture.
    5. Serve the noodles in 3 separate bowls. Garnish with the fried ikan bilis.
