Steamed egg with tofu

    This isn't as smooth as chawanmushi, but is typical homecooked food back in Singapore!

    Serves: 4 

    • 150 g silken tofu
    • 1 stalk spring onion
    • 3 eggs
    • 8 tbsp water
    • 50 g minced meat
    • 1 tsp light soy sauce

    1. Mash up the silken tofu and slice the stalk of spring onion thinly.
    2. Beat three eggs into a small bowl.
    3. Combine water, tofu, spring onion, minced meat and light soy sauce and mix well.
    4. Fill a large wok 1/3 full with water and boil under high heat.
    5. While the water starts to boil, place the bowl with the tofu and eggs onto a metal stand in the wok. Steam under high heat for about 5-8 minutes until cooked; cool and serve.
