About this recipe:
Hi…!!! Here is my version of the most popular Rainbow cakes in Jakarta Indonesia early 2012. Served cold and is made extra yummy. With this recipe, you always want more! Because it is not too sweet, perfect for people with diabetes and soft felt in every bite...

100 g plain flour
30 g corn flour
1/3 teaspoon salt
80 g caster sugar
1 tablespoons emulsifier
80 g butter, melted
100 g whippy cream
100 g cream cheese
2 teaspoon sugar powder
1 tsp flavouring paste blueberry (make purple)
1 tsp flavouring paste pandan (make green)
1 tsp + 1 drops flavouring paste strawberry (make red) + red colouring
1 tsp + 1 drops flavouring paste lemon (make yellow) + yellow colouring
1 tsp + 1 drops flavouring paste orange (make orange) + orange colouring
1 tsp + 1 drops flavouring paste vanila (make blue) + blue colouring

Preheat the oven to 350°. prepare 6 of 7,5 inch pan (15cm), lined at the base.
Beat the eggs , sugar, emulsifier until pale, thick and tripled in volume. Fold in the flour and butter.
Divide into 6 medium bowl, and add flavouring paste & food coloring in every bowl, mix gently. Pour into the tins (pan).
Bake for 20-25 minutes or until springy to the touch.
Meanwhile, make the frosting.
Beat cream cheese, beat whippy cream and mix whippy + cream cheese + sugar powder until pale and creamy, about 6-8 minutes.
Spread cream frosting into the cake and decor with springkel. See it on my blog
