About this recipe: This salad dressing is good with green salads and vegetable salads as well as grain or rice salads.

Serves: 6 

  • 3 tablespoons (45ml) white wine, sherry, or herb vinegar, or lemon juice
  • 1 teaspoon Dijon or herb mustard
  • salt or herb salt and ground white pepper
  • 4 tablespoons (60ml) good–quality olive oil
  • 5 small sprigs each parsley and dill
  • small bunch of chives
  • 2 sprigs each marjoram and Italian basil
  • pinch of sugar

  1. Whisk vinegar, mustard, salt and white pepper in a bowl until salt has dissolved. Add olive oil, whisking until vinaigrette is slightly creamy. Chop herb leaves finely and stir into vinaigrette. Add sugar and more salt and pepper, to taste.
