Cheesy Tuna Empanada

    This is a popular Filipino snack, Empanada has been part of Filipino cuisine. It is usually stuffed with ground beef or chicken with veggies but i came up to something kinda new to my taste, instead i used tuna for this one then add some veggies and cheese. Easy to make, this is deliciously insane and i'm sure everyone will enjoy. Happy cooking! :)

    Serves: 5 

    • 3 cups all purpose flour
    • 1 tsp. baking powder
    • pinch of salt
    • 1 tsp. shortening
    • 1 whole egg
    • 2 tbsp softened butter
    • 1/2 cup cold water (for the dough)
    • 2 can tuna
    • 1 small size carrot (cut in small cubes)
    • 4 tbsp. cream of mushroom (store bought)
    • 3 tbsp. water (for the filling)
    • garlic
    • onion
    • salt and pepper

    1. Combine the dry ingredients, flour, baking powder and salt in a bowl.
    2. Then add the wet ingredients, cold water (used hands to mix), then add the egg while still working on the dough, then add in the shortening and butter.
    3. Cover the dough using cling wrap, place in the fridge. Let it cool and rest. While waiting for the dough let's start with the filling.
    4. In a pan, put fire on medium heat. Add oil, saute garlic and onion, then add the carrots. Then next add the cream of mushroom and water, stir until well combine. Now, put the tuna flakes then season with salt and pepper
    5. Get the dough in the fridge, roll and cut into circles. Get one dough put the filling in the center then fold, use a fork to seal the edges.
    6. In a frying pan, add oil (half deep fry) put the fire in medium heat. When the oil is perfectly hot, fry the empanada's until golden brown.
    7. Place in a plate with tissue for the excess oil, transfer and arrange into a plate. And there you go, fast, easy and delicious cheesy tuna empanada. enjoy!

    Where's the cheese? I only see cream of mushroom in the ingredients.  -  26 Sep 2015
