Fortune Fish with Bak Kwa (奇味肉干蒸鱼)

About this recipe: It’s Chinese New Year & the craze is Bak Kwa, where prices of these Chinese Jerky escalated through the ceiling. I decided to experiment with this as one of the ingredients for my CNY Reunion Dinner. Why not try cooking this flavourful fish, with taste oozing from the sweetness of the Bak Kwa & the fragrance of Flower Mushrooms?

Ingredients

Serves: 6 

  • 2 Fish fillets
  • 8 Flower mushrooms
  • 8 Bak Kwa
  • 8 slices Ginger
  • 2 sprigs Spring onion
  • 2 tsp Oyster sauce
  • 2 tsp Chinese wine
  • 1 tsp Sesame oil
  • ½ tsp Corn flour
  • Pinch of Pepper
  • Parsley for decoration
  • Marinade for Mushrooms
  • 1 tsp Garlic (minced)
  • ½ tsp Oyster sauce
  • 1 tsp Sesame oil

Directions

Prep:15min  ›  Cook:10min  ›  Extra time:30min marinating  ›  Ready in:55min 

  1. Soak mushrooms till soft. Remove stem & marinade for at least 30 mins. Heat oil & fry mushrooms lightly till fragrant. Remove & set aside.
  2. Rinse & cut fillets into 8 equal parts. Marinade fish with seasonings.
  3. Cut Bak Kwa into bigger pieces if you prefer a sweeter taste. Place spring onions on microwavable crockery & arrange fish, mushroom & Bak Kwa neatly on the spring onions. Cover with plastic wrapper. Do not seal tightly. Microwave in Auto Steam mode, or on med-high for about 5-6 mins.
  4. Remove plastic. Decorate with parsley & serve this swanky fish hot!

Tip

use a toothpick to check if fish is cooked. Toothpick can easily go through if it’s thoroughly cooked.
