Moroccan Style Chicken Kebab

    We have a wonderful friend name Maggie, She had share this recipe with my husband and I. I think I would post this up and post it for you all to try it out. It is wonderful to pair it with some rice, quinoa, salad and even some pita bread.

    Serves: 4 

    • 1/4 cup nonfat plain yogurt
    • 1/4 cup chopped fresh parsley
    • 2 tbsp lemon juice
    • 1 tbsp extra-virgin olive oil
    • 4 cloves garlic, minced
    • 1 1/2 tsp paprika
    • 1 tsp ground cumin
    • 1/2 tsp salt
    • 1/4 tsp freshly ground pepper
    • 1/8 tsp cayenne pepper (add more if you like more heat)
    • 1 pound skinless chicken breasts

    1. Stir together yogurt, parsley, lemon juice, olive oil, garlic, paprika, cumin, salt, pepper and cayenne pepper in a medium bowl. Then set it aside.
    2. Cut chicken into 1 inch pieces ( fat trimmed). Then add chicken pieces to the bowl with all those ingredients that we set aside in the medium bowl and mixed well.
    3. Cover with plastic wrap and let the chicken marinate in the refrigerator overnight.
    4. After chicken is marinate overnight, take it out and set it aside. Take out bamboo skewers and put chicken pieces on each skewer.
    5. Preheat grilling pan with oil, when oil is hot enough place chicken in the pan. Let chicken cook for about 4-5 minutes each side or until juice from chicken runs clear.
    6. Serve cooked chicken skewers with your choice of salad, rice and many more.


    Leftovers- Use it for a salad or add it in a pita for lunch. Other option-If you don't like chicken tried this with pork or beef.
