Easy Cornbread with Sausage Stuffing

    This is a family favourite. You can buy whichever sausage you like and take it out of the casings, cook it with celery and onions, then baked with cornbread, breadcrumbs and chicken broth. Adjust the breadcrumbs according to your desired moistness.

    Serves: 12 

    • 455 g ground sausage
    • 2 stalks celery, chopped
    • 2 large onions, chopped
    • 445 g crumbled cornbread
    • 500 g seasoned breadcrumbs
    • 675 ml chicken broth
    • 1½ teaspoon poultry seasoning
    • 1 teaspoon sage

    1. Preheat oven to 165°C.
    2. Place sausage, celery and onions in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
    3. In a large bowl combine sausage mixture with cornbread, bread crumbs, chicken broth, poultry seasoning and sage. Mix well and transfer to a 22x33 cm baking dish.
    4. Bake covered, for 45 minutes or until well set and cooked through.
