    About this recipe: This was a favourite comfort food that my mother would make when we were little. Very different from the American mac and cheese comfort food!

    Ingredients
    Serves: 6 

    • 250 g macaroni
    • 300 g minced beef
    • 1 small onion, chopped
    • 2 garlic cloves, minced
    • 1 cm ginger, finely minced
    • 2 red chillies, chopped
    • 1 teaspoon turmeric powder
    • 2 teaspoons coriander powder
    • salt and pepper to taste
    • 3 eggs, lightly beaten with a little salt
    • 2 spring onions, chopped
    • a small bunch of fresh coriander leaves, chopped
    • butter
    • oil for cooking

    Directions

    1. Cook macaroni in boiling salted water for about 12 minutes or until done. Drain and set aside.
    2. Heat pan with oil, saute the onions, garlic, ginger until soft. Add the minced beef, turmeric, coriander powder salt and pepper. Cook until all the liquid is absorbed then remove from heat, stir in the chopped chillies and set aside.
    3. preheat the oven to 180°C. Grease a casserole dish with butter. put 2/3 of cooked macaroni on the bottom layer. Then spread a layer of mince meat over the macaroni followed by a layer of chopped spring onions and chopped coriander. Pour a third of the beaten egg over that layer. Finally cover that layer with the remaining macaroni follwed by the rest of the beaten eggs to cover. Dot the top with some knobs of butter and bake for about 20 minutes.
