Bubur Kacang Merah (Red Bean Porridge)

About this recipe: A simple traditional dessert to make for company or your family. Serve it chilled or warm and if you want to get creative, simply add some fresh fruit slices in it.

Serves: 6 

  • 150 g dried adzuki beans
  • 1½ can coconut milk
  • 300 ml water
  • 1 cm sliced ginger
  • 130 g brown sugar , to taste
  • a pinch of salt

Prep:30min  ›  Cook:1hr  ›  Ready in:1hr30min 

  1. Rinse and soak the beans for 30 minutes.
  2. Pour the coconut milk and water into a pot. Drain the beans and mix into the pot. Heat until boiling and let it boil for about 5 minutes then lower heat, add ginger slice and simmer.
  3. Cook until the beans start to expand and soften. Season with enough sugar to taste and add a pinch of salt. Serve chilled or warm.

I like the taste, but I had problems getting the beans to cook to a soft consistency. Cooked them for 2 hours, but they are still a bit grainy. - 05 Sep 2014
