Nina's Lechon Sauce

    It's easy enough to buy ready made lechon sauce from the store but here's a recipe that you can make yourself at home. Serve it with your favourite lechon or lechon manok.

    Serves: 6 

    • 1 tin liver pate
    • 1/2 onion, diced
    • 3 garlic cloves, minced
    • 2 tablespoons apple cider vinegar
    • 2 tablespoons brown sugar
    • 2 cups water
    • 1 cup breadcrumbs
    • salt and pepper to taste
    • 2 tablespoon cooking oil

    1. Heat pan with oil and saute garlic and chopped onions until soft. Add the liver pate, stir and cook for about 5 minutes.
    2. Mix in the cider vinegar and brown sugar. Stir until the sugar is dissolved. Add water and breadcrumbs, stir and simmer for a few minutes. Season with salt and pepper.
    3. Remove from heat and let cool for a few minutes. Pour the sauce into a blender and process until smooth. Serve with lechon.


    Instead of buying a tin of pate, you can choose to cook you own chicken or pork liver.
