Chinese chicken salad

    One of the leanest of all meats, skinless chicken breast is a superlative protein source for the health-conscious. B vitamins are a healthy bonus.

    Serves: 4 

    • 250g spaghetti or linguine
    • 2 tablespoons (30ml) light soya sauce
    • 1½tablespoons (20ml) rice vinegar
    • 3 teaspoons (45ml) sesame oil
    • 3/4 teaspoon caster sugar
    • 3/4 teaspoon ground ginger
    • Salt
    • 375g cooked shredded chicken breast
    • 2 carrots, julienned
    • 1 red capsicum, slivered
    • 2 spring onions, sliced

    1. Cook the pasta in a large saucepan of boiling water according to the packet directions, until firm-tender.
    2. Meanwhile, combine the soy sauce, vinegar, sesame oil, sugar, ginger and a pinch of salt in a large bowl. Toss with the chicken, carrots, capsicum and spring onions.
    3. Drain the pasta well and toss with the chicken mixture.
