    About this recipe: A delicious and refreshing cucumber salad. Cucumber is tossed in a dressing made from garlic, water, black vinegar, sugar, sesame oil, soy sauce and mirin. Serve as a side salad.

    Ingredients
    Serves: 2 

    • Dressing:
    • 1 tablespoon chopped garlic
    • 1/2 tablespoon water
    • 4 tablespoons black vinegar
    • 1 tablespoon caster sugar
    • 2 teaspoons sesame oil
    • 3 tablespoons soy sauce
    • 1/2 tablespoon mirin
    • 1 cucumber, diced

    1. In a small bowl, mix together the garlic, water, black vinegar, sugar, sesame oil, soy sauce and mirin to make the dressing. Adjust the seasoning accordingly.
    2. Pour over the cucumber, toss and chill for at least 4 hours before serving.

    Ingredients

    Black vinegar and mirin can be purchased at Chinese/Oriental speciality stores.
