Sambal Balado

About this recipe: A spicy condiment in the Indonesian household and usually served with rice dishes.

Ingredients

Serves: 6 

  • 3 red chillies
  • 5 shallots
  • 1 clove garlic
  • 1/2 small tomato, cut into small chunks
  • salt to taste
  • juice of half lime
  • 2 teaspoon oil

Directions

  1. Pound the chillies, shallots, garlic and tomato in a mortar and pestle until fine.
  2. Heat a little oil in pan and saute and stir the pounded ingredients until fragrant. Remove from heat and season with salt and lime juice.
