    About this recipe: These filo pastry rolls make an excellent starter. The filling is a colourful mixture of low-fat minced chicken and plenty of vegetables, with a little smoked ham and fresh herbs to add to the flavour. The rolls are served with a piquant cranberry relish.

    Ingredients
    Serves: 8 

    • 1 large carrot, cut into very thin sticks
    • 75 g savoy cabbage, thinly sliced
    • 2 spring onions, cut into thin strips
    • 250 g lean minced chicken
    • 50 g lean smoked ham, finely chopped
    • ½ small onion, finely chopped
    • 2 tbsp fresh white breadcrumbs
    • 2 tsp chopped fresh sage
    • 2 tsp chopped fresh thyme
    • salt and pepper
    • 4 sheets filo pastry (about 45 x 30 cm each)
    • 2 tbsp (30ml) extra virgin olive oil
    • 2 tsp margarine, melted
    • 1 tsp sesame seeds
    • For the relish
    • ¼ cup (70 g) cranberry sauce
    • 2 tsp (10ml) extra virgin olive oil
    • 1 tbsp (15ml) red wine vinegar
    • 1 tsp English mustard
    • salt and pepper
    • To serve
    • 200 g mixed salad leaves

    1. Blanch the carrot, cabbage and spring onions in boiling water for 1 minute. Drain, then plunge into a bowl of cold water to refresh. Drain again and pat dry with paper towel. Put the vegetables in a large mixing bowl with the chicken, ham, onion, breadcrumbs, herbs and seasoning. Mix together well, then set aside.
    2. Preheat the oven to 190°C. Halve each filo pastry sheet lengthways and then trim to a strip measuring 36 x 12 cm. Mix the olive oil and margarine together.
    3. Brush one pastry strip lightly with the oil and margarine mixture. Place an eighth of the filling at one end, shaping it into a sausage. Roll up the filling inside the pastry, folding in the long sides as you go, to make a spring roll-shaped parcel. Place on a baking tray and brush with a little of the oil and margarine mixture. Repeat to make another seven parcels.
    4. Score a few diagonal slashes on top of each parcel. Sprinkle with the sesame seeds. Bake for 30 minutes or until the pastry is golden.
    5. Meanwhile, put all the ingredients for the relish in a screw-top jar, season and shake well.
    6. Arrange the salad leaves on serving plates, place a filo roll on each and drizzle with the relish.
