    About this recipe: These delicious biscuits are extremely convenient; you prepare the dough in advance and then store in the freezer for weeks until you are ready to bake them. They're great served with wine or aperitif.

    Serves: 6 

    • 80g butter
    • 250g blue cheese
    • 1 egg yolk
    • 130g plain flour
    • 125g walnuts, chopped

    1. Mix together the butter and cheese. Add the egg yolk, flour and walnuts.
    2. Turn the dough out onto a clean work surface and roll into a log about 5cm in diameter. Roll in baking paper then place in a freezer bag and place in the freezer for at least an hour.
    3. One hour before ready to bake remove the dough from the freezer and allow it to thaw slightly at room temperature.
    4. Meanwhile; preheat the oven to 180 degrees C and line a baking tray with baking paper.
    5. Cut the dough into discs about 3mm thick. Place the biscuits on the prepared baking tray and bake in the preheated oven for 12 minutes.
