Almonds are a source of thiamine for your metabolism. Here's a simple and delicious way to use them.
3 tablespoons low-fat mayonnaise
1 tablespoon (15ml) white wine vinegar
1 large bunch broccoli
3 medium carrots, peeled and grated
¼ cup (25 g) slivered almonds, toasted
3 tablespoons chopped parsley
pinch of black pepper
- For the dressing, whisk the mayonnaise and vinegar in a small bowl.
- Cut off broccoli florets and reserve for another use. Peel the stalks, then grate in a food processor or by hand.
- Combine broccoli, carrot and dressing in a large bowl. Stir in almonds, parsley and pepper.
