About this recipe: This is the Christmas cake icing recipe that I use for my cake every year. Why move away from something that works so well and tastes so good?


Serves: 12 

  • 2 large egg whites
  • 1 tablespoon fresh lemon juice
  • 2 1/2 cups (440g) icing sugar, sieved

  1. With an electric mixer beat the egg whites with the lemon juice.
  2. Add the sieved icing sugar and beat on low speed until smooth.
  3. Use to ice your Christmas cake immediately or store in an airtight container in the fridge.
