This is the Christmas cake icing recipe that I use for my cake every year. Why move away from something that works so well and tastes so good?
2 large egg whites
1 tablespoon fresh lemon juice
2 1/2 cups (440g) icing sugar, sieved
- With an electric mixer beat the egg whites with the lemon juice.
- Add the sieved icing sugar and beat on low speed until smooth.
- Use to ice your Christmas cake immediately or store in an airtight container in the fridge.
