About this recipe: This is a unique way to serve this luscious summer fruit! The balsamic vinegar brings out the beautiful colour of the berries, and truly enhances their flavour. Great served with a simple sponge, over vanilla ice cream or simply on its own with a dollop of cream.


Serves: 6 

  • 450 g fresh strawberries, hulled and large berries cut in half
  • 30 ml balsamic vinegar
  • 50 g white sugar
  • 0.5 g freshly ground black pepper, or to taste

  1. Place strawberries in a medium bowl. Drizzle vinegar over strawberries and sprinkle with sugar. Stir gently to combine. Cover; stand at room temperature for at least 1 hour, but not more than 4 hours. Just before serving, grind pepper over berries.
