Tomato, Cucumber and Red Onion Salad with Mint

    Serves: 6 

    • 2 large cucumbers - halved lengthwise, seeded and sliced
    • 80 ml red wine vinegar
    • 10 g white sugar
    • 6 g salt
    • 3 large tomatoes, seeded and coarsely chopped
    • 110 g coarsely chopped red onion
    • 15 g chopped fresh mint leaves
    • 45 ml olive oil
    • salt and pepper to taste

    1. In a large bowl, toss together the cucumbers, vinegar, sugar and salt. Stand at room temperature for 1 hour, stirring occasionally.
    2. Add tomatoes, onion, mint and oil to cucumber mixture and toss to combine. Season to taste with salt and freshly ground black pepper.

    This was a great snack while passing the time BBQ-ing with friends! Followed directions, but only snipped in a "little" mint, not the full amount. The mint really adds a little surprise to it! We had Sea Salt Bagel Crisps, spread some garlic and herb soft cheese on it, topped off with a cucumber/grape tomatoes sliced small/onions from the salad and really enjoyed it!
