Mini Orange Mince Pies

    This is my brothers recipe, and I love it so I decided to share this wonderful recipe with you.

    Ingredients
    Serves: 18 

    • 220 g all-purpose flour
    • 30 g confectioners' sugar
    • 5 g ground cinnamon
    • 150 g butter, softened
    • 10 g grated orange zest
    • 60 ml ice water
    • 210 g prepared mincemeat pie filling
    • 1 egg, beaten
    • 30 g confectioners' sugar for dusting

    Directions

    1. Preheat oven to 200 degrees C.
    2. Sift together the flour, sugar and cinnamon into a large bowl. Rub in the butter until mixture resembles fine bread crumbs. Stir in the orange rind. Stir in enough iced water to make a soft dough. Knead dough on a flour surface for 1 minute or until smooth.
    3. Roll out to 5mm thick. Cut out approximately 18 x 7cm diameter circles, and 18 x 5cm circles, rerolling dough as needed.
    4. Line patty pan holes using the larger pastry circles. Fill each pastry cup with about 1 tablespoon of fruit mince. Top with smaller pastry circles, pinching circles together to seal the edges. Brush the top of each pie with egg.
    5. Bake pies about 15 to 20 minutes or until golden. Cool slightly on wire racks. Dust with icing sugar just before serving.

    These were so easy to make and had a lovely flavour to them. The only thing I did differently was use chilled pure orange juice instead of water for the pastry.     These were really lovely as is. I was generous with my orange zest and cinnamon. The next time I make these I want to try using ice cold orange juice instead of water, for extra flavour in the crust.
